I think you're confused. The video is still up on Colbert's YouTube channel. The one that got taken down was someone reposting it as their own content on YouTube (which is what's supposed to happen).
Are you sure that is what’s happening here? As the video is still up youtu.be/jJTXB5uT_C4 And shared on the cbs owned Late Show channel, it seems like it only being protected from duplication uploads, not actually blocked.

How do you know CBS/Paramount issued complaints? Looks more as if the YouTube algorithm identified Colbert's name and assumed it was a Paramount property and therefore issued the statement.
Looking forward to another explanation about how Colbert was canceled because "it was losing money!" as the top-rated show in its time period. When talk shows are literally the cheapest type of programming to produce.
